This is the top Cuvee from a producer rated third behind Krug and Bollinger by Revue du Vin. The fruit is from a single Avize vineyard. The wine is pale gold and slightly nutty on the nose. Very rich on the palate, with plenty of honeyed fruit and a good mineral seam. It is ripe and balanced, with great acidity, has an elegant finish and superb length. Drinking very well now.

A thoroughbred wine - (the first Champagne house ever to use 100% Chardonnay) only produced in the very finest of vintages.  Ridiculously few (35) vintages have been released since 1911 and the stellar 1996, saw demand for Salon rocket; whilst not in the same class of vintage the 1997 is truly gorgeous and just perfect for drinking now. Routinely aged for 8-12 years in deep chalk cellars and hand disgorged, everything about this wine sings attention to detail and supreme quality
