Manzanilla is the name given to Fino from the coastal town of Sanlucar de Barrameda in Andalucia. It is the driest of the Sherries as well as being the lightest. The terroir of the vineyards, set between the sea, the river and the marshlands to the North creates a degree of humidity that allows the flor yeast to grow on the surface of the maturing wine all year round. It is this cap of yeast which imparts the salty, yeasty, tang that makes it such a refreshing summer drink. Elsewhere in Sherry, the flor yeast dies off the surface during summer and winter. The climatic situation has curious parallels with the Sauternes region of France. This Sherry is bone dry, almost water white in colour. The palate is clean, crisp and refreshing . The classic salty palate coupled with its bready, flor yeast character fills the mouth and lingers on the tongue. A perfect aperitif, on its own, or with fresh seafood, sushi, salted almonds or jamon serrano. Best drunk ice cold, this is definitely a summer secret worth discovering.

Wine Behind the Label 2006.The most artisan of white ports, made from ancient vines, with some of the grapes still trodden in the old way. Cask-ageing adds to the luscious flavours of honey and butterscotch. Off-dry, it makes a wonderful aperitif, especially with salted almonds or olives. Once opened, it will keep (as long as you can keep your hands off it) perfectly in the fridge.

Forget all those glorified Ruby ports in supermarkets called Late Bottled Vintage around Christmas, this is a traditional LBV, which has had four years maturation in oak, imparting incredible character and structure and with the capacity to develop in bottle. Crammed with rich blueberry flavours so typical of the Churchill style. Unfiltered, it will throw sediment, so be prepared to decant.
